Käsespätzle is a dish from the Swabian region of southern Germany, made of fresh pasta and tangy cheese, topped with crispy fried onions or mushrooms for added flavor. It is popular in the region due to its simplicity and deliciousness.

Florian, Myriam and Oliver, some of the earliest pioneers of the food truck movement in Germany, kicked off the culinary journey of mobile food trucks in April 2013 by converting Nagetusch, a Soviet-era German camper, into a rather textured rolling kitchen.
Although the dish Käsespätzle appears to be one-dimensional, it has made a name for itself in Berlin by using a unique blend of cheeses. Developed in a small local dairy, this specialty cheese uses different types of milk and fermentation times, and has a complex, aromatic flavor that takes Käsespätzle straight up a notch.

Florian, Myriam and Oliver say they really enjoy the feeling of sharing food and love along the way. In addition to their love of food, their favorite thing about the mobile kitchen is the freedom it brings, and the warm and intimate feeling they get from the people they eat with.
